Mocha Popsicles

It’s just way too hot this summer. Not that I’m complaining about the beautiful sunshine! Just a little tired of having to cut our way through the muggy to get to and from our car. :)

So I’ve decided to throw in a homemade Popsicle of the day to send heartfelt cool wishes your way, …and because I’ve found some amazingly yum-looking recipes for these frozen treats, easy to boot.

First up, these Mocha beauties: {the perfect solution to my extremely odd coffee craving amidst our triple digit temps. I know. Weird. This icy version should do the trick!}

2 cups (500ml) extra-strong coffee or espresso (brewed)

2/3 cup (160ml) sweetened condensed milk
(or half and half, or milk – we’ve got the raw milk which translates to awesome cream)

1 1/2 tablespoon of unsweetened dutch processed cocoa powder
(We’ve been buying the SACO premium blend of natural and Dutched Cocoa – delish in our homemade ice cream so it should work great for the Popsicles.)

To Make
Mix the coffee with the sweetened condensed milk. Add the tablespoon of cocoa powder. Taste, and add a bit more milk or chocolate powder, if desired. (A spoonful or two is fine, but any more and the popsicles won’t freeze as hard.)

Pour into popsicle molds and freeze until sold. Mine took about 8 hrs. To loosen the popsicle out of its mold, hold under warm water until it slides out. Voila! Awesome Mocha Popsicles.
